How We Test Every Recipe Before It Reaches Your Kitchen

Every recipe on this site has been cooked at least three times before you ever see it. Not styled three times — cooked three times, by more than one person, in a normal home kitchen with normal equipment. Here is what that actually looks like.

Cook one: does it work?

The first cook is about the idea. We follow the recipe exactly as written — no fixing, no improvising — and write down everything that confuses us. Vague timings, missing temperatures, steps in the wrong order: it all goes in the notebook.

Cook two: does it work for someone else?

A different cook makes it, in their own kitchen, with their own pans and their own oven that runs 10 degrees hot. If the recipe only works in our kitchen, it doesn’t work. This is the cook that kills most darlings.

Cook three: the photograph

Only recipes that survive the first two cooks get photographed — and we photograph the actual dish from the third cook. What you see on the card is what the recipe makes. No stand-ins, no borrowed glamour.

It’s slow. It’s occasionally maddening. But it’s why members tell us our recipes just work — and that’s the whole point of the club.
